Our Selection Red wine is produced by the assemblage of Tempranillo and Merlot.
For this purpose we have selected the oldest plots in our estate, which produce a smaller and more balanced grape. After careful harvest, the bunches are examined manually on a selection table and the harvests are placed in separate vats to completely preserve the characteristics of each plot.
The maceration is undertaken at room temperature before beginning a controlled fermentation at 26ºC. The maceration lasts for a total of between 28-30 days. After devatting the malolactic fermentation is undertaken in new French oak barrels.
The wine is aged in fine grain French oak barrels that have been medium toasted for 24 months, after which it undergoes its final assemblage by selecting the barrels one by one and choosing only the best.
The final wine is clarified gently with egg white before bottling and allowed to finish resting in bottles for another 12 months in our cellars.
